Created by Sergio Moro -- the "Willy Wonka of cheese" -- at the northern Italian cheese refinery his grandfather opened in 1930, this cow’s milk wheel ages under a mixture of Raboso and Alpine red wines vinified near Sergio's home town.
During the aging process, Sergio also pierces the cheese, so the wine's flavors and aromas permeate not just the surface but also the interior -- inspiring the cheese's Ubriacone name, a teasing Italian term for a big drunk.
