Salmon filet that we cured under Ouzo--Greece's famous dry anise-flavored aperitif--and grapefruit, orange, Aleppo pepper (that comes from a burgundy Halaby chili that's only about half as spicy as most chili flakes).
Ready to eat right out of the package, serve as you would salmon lox: slice thinly to top crackers, bread, potato pancakes, salad greens, eggs, and more. Pair with Fromage Frais and your favorite bagel.
