Whole Red Snapper we stuffed with crab, our chorizo, herbs, citrus, and more. 

Smoked over applewood, these whole fish are fully cooked and simply to heat and serve hot (see easy heating instructions below).

Serve with Castelluccio Lentils and a baguette. Finish with a drizzle of Frantoio Forsoni EVOO

Each fish is about 1.5 lbs and serves 2-4. Store in freezer.

Heating Instructions: Remove fish from freezer and thaw thaw completely. Preheat oven to 250F. Remove fish from packaging and place on an oven safe pan. Cover the pan with a loose "tent" of aluminum foil, sealing the edges tightly around the rim of the pan. Heat in the oven until the center of the fish's internal temperature reaches 145F. Exact timing will depend on how cold the fish is going into the oven, but begin checking the internal temp after about 20 minutes.
