Hand-trimmed whole muscle from the heart of the ham, the most prized portion. Cured 30 days under black peppercorns and red wine then laced in traditional pork bladders and aged at least 10 months.

  • Package of Slices: 3oz (single or choose the 5-pack bundle and save!)- keep refrigerated
  • Each half piece is 3-3.5 lbs each, not sliced
