We seasoned pasture-raised Black Angus beef tri-tip with our house-made Wild Ramp Spice Rub and slow smoked 'em over fruitwood.
Fully cooked and ready to eat, or simple to heat and serve hot (see easy instructions below).
Slice thinly and serve with Apricot Glazed Baked Beans. Or enjoy on a sandwich topped with Roelli Red Rock Cheddar and Batali Pickled Red Onions
Available in three size ranges:
- Petite - about 1.7-2 lbs each
- Medium - about 2-2.5 lbs each
- Grande - about 2.75-3 lbs each

Ingredients: Beef Tri-tip, "Kiss the Brick" Spice Rub with Summer Ramps (Ramp salt (dehydrated ramps, salt, garlic powder, onion) powder), paprika, black pepper, brown sugar, garlic powder, onion powder, ground mustard, cayenne pepper)
Optional Heating Instructions: Remove tri-tip from its packaging and let rest at room temp for about 30 minutes. Wrap loosely with tin foil and rest on a baking sheet. Heat in a 300F oven or on the top rack of the grill for about 20 minutes or until heated throughout. How long it takes depends on how cold it was going into the oven/grill. In a rush? Slice before heating.
