Hand-trimmed whole muscle from the heart of the ham, the most prized portion. Cured 30 days under black peppercorns and red wine then laced in traditional pork bladders and aged at least 10 months.
6-7 lbs each, not sliced.
Store at cool, consistent room temperature (refrigerate after slicing into it).
