We blended our lightly smoked chicken livers with pork for this rich pate spiked with sweet Cortland Apples from Doud Orchards in Denver, Indiana, plus hard apple cider, orange zest, ginger, white peppercorns, Dijon mustard, and more.

With the traditional sealing of rendered leaf lard on top, allow this pate to come to room temp before smearing on Potter's Caramelized Onion Crackers with a sliver of Petit Cornichons.
