This pork salame blends spruce tips with 18th Street Brewing's American Pale Ale and lemon peel, clove, Calabrian pepper, and pink peppercorns. Pairs perfectly with The Blue Jay: Juniper Blue Cheese and on Citrus Ginger Thyme Crisps

The recipe was developed by Quality Control Manager Chris Stultz--pictured here on the right with Smoking Goose owner Chris Eley on the left--and features Indiana’s 18th Street Brewery pale ale + locally foraged spruce tips.
 
Spruce tips? Yes, Chef. These very soft spurts grow in early spring and have a citrus-y, resin-y freshness -- a traditional spice that Smoking Goose owner and butcher Chris learned to use during a long-ago trip in Alaska.
