Garfish--also known as needlefish for their long, narrow beaks--are caught seasonally, only during the colder months in the Cantabrian Sea off the northern coast of Spain. These small fish are about the size of a sardine, with a rich, meaty flavor similar to mackerel.
Serve as an appetizer with Spent Grain Crackers, Tulip tree Nettle Cheese, with a dash of Espinaler Sauce.
