We brined wild Atlantic salmon under citrus and herbs before seasoning 'em with a generous dose of our house-made Cajun spice rub.

Smoking over fruitwoods and hardwoods, our Cajun Spiced Salmon is fully cooked and ready to eat right out of the package or simple to heat and serve hot.

A Mardi Gras essential along with our Crawfish Boudin, Andouille, Boudin Blanc, and more. Or serve as an entree with Organic Tagliolini Egg Pasta,finished with Agrumato Lemon infused Olive Oil.
