Preserved Lemons are an essential Moroccan culinary tradition using small Beldi lemons, salt and time to give a bright citrus, complex umami flavor to a variety of dishes. While the outer skin works well thinly sliced or diced for braises and tagines, the inner flesh works well smashed into dressings, vinaigrette and marinades.
