Spruce tips? Yes, chef. the soft, new growth on spruce trees bring a citrusy, resin-y freshness. It's a traditional spice with a long history in Nordic cooking that Smoking Goose owner Chris learned to use during a trip to Alaska.
Cut on a slice bias to serve and pair with cheese curds, tamarind, cardamom, bean dishes, mackerel, carrot salad, orange preserves, and more.
