This traditional Sicilian cheese is made in a traditional style and gets it's namesake from the word sheep, whose milk is used to make these studded cheeses. This cheese is typically aged between 2-4 months and its high butterfat content gives it a mild, supple flavor cut with the sharp peppercorn.
