We smoked locally-foraged oyster mushrooms, then pickled 'em under soy sauce, rice wine vinegar, gochujang, sesame seeds, orange peel, and more.

Serve with seared Korean-cut beef short ribs and top hot pho or cold soba noodle salad. Make a delicious sandwich with our Beef Bacon and these succulent mushroom pickles. Serve on charcuterie + cheese boards paired with our salumi and Milkweed cheese.
