Ecrase is a traditional French technique of roughly chopping veg to blend into a coarse spread. This vegetarian ecrase of leeks, sesame seeds, creme fraiche, Guérande salt, and pepper is delicious on toast, over our favorite grilled sausage, dabbed between layers of gratin potatoes, and served with rich, creamy cheeses.
