Saithe (commonly known as Pollock in the U.S.) is in the codfish family. Its firm, flaky flesh is ideal for rillettes with a stand-up flavor that pairs deliciously with fennel.
Serving suggestion: spread on 4 Birds Spent Grain Crackers or toasted baguette with pickles (we especially like pickled fennel or gin pickles) as a first course. Serve with scrambled eggs at brunch and alongside potato pancakes and our Wild Fennel Sausage for bunch or brinner.
