Bring your appetite for a hearty tasting and informative class exploring the art, science, and dare we say magic of autumn's spook-tacular pairings. No prior experience is necessarily for this advanced tasting and pairings class -- the mad flavor scientists of our Public Smokehouse are ready to lead you, bite by bite.

Learn as we build the perfect pairings of the season's top charcuterie, cheeses, seafood, pickles, preserves, accompaniments, and more. As we make our way from one end of the charcuterie board to the other, we'll dive into (and taste!) what makes pairings work, how to take them to the next level, and how to shop for the best selections. 

Especially with the upcoming holidays in mind, Public Smokehouse staff member Amber and Certified Cheese Professional Anna lead this fun class through show stopper pairings and professional techniques including
  • learn the basics on smoked accoutrements like pistachios and honey comb
  • learn how to make your own one-of-a-kind pickle
  • learn how the professionals use taste, aromas, textures, plating techniques, and more as each guest gets their own pairing board to devour all through class
  • some of the pairings we'll discuss on the Halloween-themed "Boo-Cuterie" Board include figs and imported cheeses like Mimolette 
Enjoy a behind-the-scenes tour of Smoking Goose including USDA-inspected production areas, smoked seafood production area, Salumi & Cured Meat Aging Rooms, plus more.

Then comes even more snack time as we'll delve deeper into advanced pairing techniques. Participants have the opportunity to create their own one-bite-wonder masterpieces from sampling stations of charcuterie, cheeses, condiments, and more that are all available at Public Smokehouse.
