After smoking these locally foraged mushrooms, we blended them with sauteed shallots, garlic, fresh herbs, locally foraged ramps.
Ingredients: assorted mushroom varieties, extra virgin olive oil, shallots, garlic, parsley, thyme, ramps, crushed red pepper, salt
Serve over fresh goat cheese sprinkled with applewood smoked bacon bits and toasted baguette or french croutons. Toss in salads. Top grilled steaks or spread in sandwiches.
