Arctic Char is a cold-water fish native to Alpine lakes and arctic and subarctic coastal waters. Unlike Salmon which die after spawning, Arctic Char can live for up to 25 years and grow up to 25 pounds, making it highly sustainable.
After slow smoking the fish for hours, we glazed it with our house-made Cranberry Ginger Butter spiced with garlic, chili power, turmeric, and coriander. Serve alongside Castelluccio Di Norcia Organic Lentils or our Mushroom Risotto Kits
